Danielle's peanut sauce recipe

500g raw peanuts with skin, deep fried until golden brown
30g garlic cloves peeled and sliced
25-30g bird's eye chillis finely sliced
20g galangal washed and sliced
50g palm sugar, chopped
1l coconut milk
1 tbsp sweet soy sauce
2 kaffir lime leaves, torn
2 tbsp fried shallots
- Combine peanuts, garlic, chillis and galangal in a food processor or stone mortar and grind finely.
- Place ground ingredients in a heavy saucepan together with coconut milk, palm sugar, sweet soy sauce and bring to the boil, reduce heat and simmer uncovered, stirring frequently to prevent sauce from sticking, for 15 mins.
- Add juice of limes and sprinkle with shallots just before serving. Season to taste with salt.
